- In a mixing bowl, combine chipotle powder, cumin, garlic powder, salt, and pepper. Add chicken slices and toss to coat evenly.
- Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 5-7 minutes per side, or until cooked through and slightly browned.
- While chicken cooks, lightly toast sourdough bread slices.
- Spread mashed avocado evenly on each slice of toasted bread.
- Top avocado with a slice of cooked chicken and a slice of Monterey Jack cheese on each sandwich.
- Place sandwiches in a grill pan or panini press (optional) and cook for 2-3 minutes per side, or until cheese is melted and bubbly. Alternatively, you can broil for 2-3 minutes until cheese melts.
- Serve immediately and enjoy!
Notes
For spicier melts, add a pinch of cayenne pepper to the chicken seasoning. You can substitute other cheeses, such as cheddar or pepper jack, for the Monterey Jack. Add some sliced jalapeños for extra heat!
