  • 4 Boneless, skinless chicken breasts Cut into 1/2-inch thick slices
  • 1 tbsp Chipotle powder
  • 1/2 tsp Cumin
  • 1/2 tsp Garlic powder
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
  • 1 tbsp Olive oil
  • 4 slices Sourdough bread
  • 4 slices Monterey Jack cheese
  • 1 Avocado ripe, mashed

  • In a mixing bowl, combine chipotle powder, cumin, garlic powder, salt, and pepper. Add chicken slices and toss to coat evenly.
  • Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 5-7 minutes per side, or until cooked through and slightly browned.
  • While chicken cooks, lightly toast sourdough bread slices.
  • Spread mashed avocado evenly on each slice of toasted bread.
  • Top avocado with a slice of cooked chicken and a slice of Monterey Jack cheese on each sandwich.
  • Place sandwiches in a grill pan or panini press (optional) and cook for 2-3 minutes per side, or until cheese is melted and bubbly. Alternatively, you can broil for 2-3 minutes until cheese melts.
  • Serve immediately and enjoy!

Notes

For spicier melts, add a pinch of cayenne pepper to the chicken seasoning. You can substitute other cheeses, such as cheddar or pepper jack, for the Monterey Jack. Add some sliced jalapeños for extra heat!
