Method

Instructions
  1. In a large mixing bowl, combine the yogurt, lemon juice, vegetable oil, minced garlic, grated ginger, ground cumin, ground coriander, ground turmeric, garam masala, red chili powder, and salt. Mix well to form a marinade.
  2. Add the chicken pieces to the marinade, ensuring they are well coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, preferably overnight for maximum flavor.
  3. Preheat your grill or oven to 200°C (400°F).
  4. If using skewers, soak wooden skewers in water for about 30 minutes to prevent burning.
  5. Thread the marinated chicken pieces onto the skewers, leaving a little space between each piece for even cooking.
  6. Place the skewers on the grill or a baking tray if using an oven. Grill the chicken for about 15-20 minutes, turning occasionally, until the chicken is fully cooked and has a nice char.
  7. Once cooked, remove the chicken from the grill or oven and let it rest for a few minutes.
  8. Garnish with fresh cilantro and serve with lemon wedges on the side.

Notes

For a spicier version, increase the amount of red chili powder. Serve with naan or rice for a complete meal.
