  • 2 medium Zucchini sliced into 1/4-inch thick rounds
  • 1 cup Mozzarella Cheese shredded
  • 1/2 cup Parmesan Cheese grated
  • 2 Eggs lightly beaten
  • 1 cup Breadcrumbs panko recommended
  • 1 tsp Garlic Powder
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
  • 2 tbsp Olive Oil

  • Preheat oven to 375°F (190°C).
  • In a large bowl, combine the beaten eggs, garlic powder, salt, and pepper.
  • In a separate bowl, combine the breadcrumbs and Parmesan cheese.
  • Dip each zucchini slice into the egg mixture, then dredge in the breadcrumb mixture, ensuring it's fully coated.
  • Arrange the coated zucchini slices on a baking sheet lined with parchment paper, slightly overlapping.
  • Drizzle olive oil over the zucchini slices.
  • Bake for 20-25 minutes, or until golden brown and tender. Sprinkle with mozzarella cheese during the last 5 minutes of baking.
  • Remove from oven and let cool slightly before serving.

Notes

For a crispier result, broil the zucchini for the last 2-3 minutes. You can also add other herbs and spices to taste, such as oregano or basil.
