  • 2 medium Zucchini sliced into 1/4-inch thick rounds
  • 1 cup Mozzarella Cheese shredded
  • 1/2 cup Parmesan Cheese grated
  • 2 Eggs lightly beaten
  • 1 cup Breadcrumbs panko recommended
  • 1 tsp Garlic Powder
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
  • 2 tbsp Olive Oil

Method
 

Instructions
  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, combine the beaten eggs, garlic powder, salt, and pepper.
  3. In a separate bowl, combine the breadcrumbs and Parmesan cheese.
  4. Dip each zucchini slice into the egg mixture, then dredge in the breadcrumb mixture, ensuring it's fully coated.
  5. Arrange the coated zucchini slices on a baking sheet lined with parchment paper, slightly overlapping.
  6. Drizzle olive oil over the zucchini slices.
  7. Bake for 20-25 minutes, or until golden brown and tender. Sprinkle with mozzarella cheese during the last 5 minutes of baking.
  8. Remove from oven and let cool slightly before serving.

Notes

For a crispier result, broil the zucchini for the last 2-3 minutes. You can also add other herbs and spices to taste, such as oregano or basil.
