- Preheat oven to 375°F (190°C).
- In a large bowl, combine the beaten eggs, garlic powder, salt, and pepper.
- In a separate bowl, combine the breadcrumbs and Parmesan cheese.
- Dip each zucchini slice into the egg mixture, then dredge in the breadcrumb mixture, ensuring it's fully coated.
- Arrange the coated zucchini slices on a baking sheet lined with parchment paper, slightly overlapping.
- Drizzle olive oil over the zucchini slices.
- Bake for 20-25 minutes, or until golden brown and tender. Sprinkle with mozzarella cheese during the last 5 minutes of baking.
- Remove from oven and let cool slightly before serving.
Notes
For a crispier result, broil the zucchini for the last 2-3 minutes. You can also add other herbs and spices to taste, such as oregano or basil.
