- Begin by boiling the yellow potatoes in salted water until they are tender, about 20-25 minutes. Drain and let them cool slightly.
- Once the potatoes are cool enough to handle, peel them and place them in a large mixing bowl. Mash the potatoes until smooth.
- In a separate bowl, whisk together the lime juice, vegetable oil, yellow mustard, salt, black pepper, cumin, and paprika until well combined.
- Pour the lime mixture over the mashed potatoes and mix until fully incorporated. Taste and adjust seasoning if necessary.
- In another bowl, combine the cooked, shredded chicken (or tuna), mayonnaise, cilantro, red onion, and olives (if using). Mix well to create the filling.
- To assemble the causa, take half of the potato mixture and spread it evenly on the bottom of a serving dish or individual molds.
- Layer the filling mixture on top of the potato base, spreading it evenly.
- Add the remaining potato mixture on top, smoothing it out to cover the filling completely.
- Chill the assembled causa in the refrigerator for at least 1 hour to allow the flavors to meld.
- When ready to serve, slice the causa into portions and garnish with avocado slices and lettuce leaves.

Notes
For a vegetarian version, substitute the chicken or tuna with more vegetables or beans.
