  • 2 lbs Yellow Potatoes
  • 1/2 cup Lime Juice
  • 1/4 cup Vegetable Oil
  • 1 tablespoon Yellow Mustard
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1/2 teaspoon Ground Cumin
  • 1/2 teaspoon Paprika
  • 1 cup Cooked, Shredded Chicken or Tuna
  • 1 Avocado, sliced
  • 1/2 cup Mayonnaise
  • 1/4 cup Chopped Cilantro
  • 1/4 cup Diced Red Onion
  • 1/4 cup Sliced Olives (optional)
  • Lettuce Leaves for Serving

Method
 

Instructions
  1. Begin by boiling the yellow potatoes in salted water until they are tender, about 20-25 minutes. Drain and let them cool slightly.
  2. Once the potatoes are cool enough to handle, peel them and place them in a large mixing bowl. Mash the potatoes until smooth.
  3. In a separate bowl, whisk together the lime juice, vegetable oil, yellow mustard, salt, black pepper, cumin, and paprika until well combined.
  4. Pour the lime mixture over the mashed potatoes and mix until fully incorporated. Taste and adjust seasoning if necessary.
  5. In another bowl, combine the cooked, shredded chicken (or tuna), mayonnaise, cilantro, red onion, and olives (if using). Mix well to create the filling.
  6. To assemble the causa, take half of the potato mixture and spread it evenly on the bottom of a serving dish or individual molds.
  7. Layer the filling mixture on top of the potato base, spreading it evenly.
  8. Add the remaining potato mixture on top, smoothing it out to cover the filling completely.
  9. Chill the assembled causa in the refrigerator for at least 1 hour to allow the flavors to meld.
  10. When ready to serve, slice the causa into portions and garnish with avocado slices and lettuce leaves.
  11. Enjoy your refreshing causa de Lima!

Notes

For a vegetarian version, substitute the chicken or tuna with more vegetables or beans.
