  • 1 cup orzo pasta
  • 2 tbsp olive oil
  • 2 large onions thinly sliced
  • 2 cloves garlic minced
  • 1 tsp fresh thyme leaves
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup vegetable broth
  • 1 cup heavy cream
  • 1 1/2 cups grated Gruyère cheese
  • 1/2 cup grated Parmesan cheese
For Garnish (optional)
  • Fresh parsley

Equipment

  • Large pot
  • Large skillet
  • Baking dish
  • Mixing bowl
  • Measuring cups and spoons

  • Oven mitts

Method

  1. Step 1: Preheat the oven to 375°F (190°C).
  2. Step 2: In a large pot, bring water to a boil and add the orzo pasta. Cook according to package instructions until it is al dente, about 8-10 minutes. Drain and set aside.
  3. Step 3: In a large skillet, heat olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, until caramelized and golden brown, about 15-20 minutes. Add minced garlic, thyme, salt, and pepper, cooking for an additional 2 minutes.
  4. Step 4: In a large mixing bowl, combine the cooked orzo, caramelized onion mixture, vegetable broth, heavy cream, 1 1/2 cups of Gruyère cheese, and half of the Parmesan cheese. Mix thoroughly.
  5. Step 5: Grease your baking dish and pour the orzo mixture into it, spreading it out evenly. Sprinkle the remaining Parmesan cheese on top.
  6. Step 6: Bake for 25-30 minutes, or until the top is golden brown and bubbly.
  7. Step 7: Allow to cool for a few minutes before serving. Garnish with fresh parsley if desired.
