- Step 1: Preheat the oven to 375°F (190°C).
- Step 2: In a large pot, bring water to a boil and add the orzo pasta. Cook according to package instructions until it is al dente, about 8-10 minutes. Drain and set aside.
- Step 3: In a large skillet, heat olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, until caramelized and golden brown, about 15-20 minutes. Add minced garlic, thyme, salt, and pepper, cooking for an additional 2 minutes.
- Step 4: In a large mixing bowl, combine the cooked orzo, caramelized onion mixture, vegetable broth, heavy cream, 1 1/2 cups of Gruyère cheese, and half of the Parmesan cheese. Mix thoroughly.
- Step 5: Grease your baking dish and pour the orzo mixture into it, spreading it out evenly. Sprinkle the remaining Parmesan cheese on top.
- Step 6: Bake for 25-30 minutes, or until the top is golden brown and bubbly.
- Step 7: Allow to cool for a few minutes before serving. Garnish with fresh parsley if desired.
Notes
This dish is perfect for meal prepping. You can prepare it in advance and store it in the fridge. Just pop it in the oven when you're ready to serve.
