  • 1 medium head cauliflower cut into florets
  • 1 cup orzo pasta
  • 2 tbsp olive oil
  • 1 cup buffalo sauce
  • 1 cup shredded cheese cheddar, mozzarella, or a blend
  • 1/2 cup cream cheese softened
  • 1 cup vegetable broth
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper
  • Fresh parsley

Method
 

  1. Step 1: Preheat your oven to 375°F (190°C).
  2. Step 2: In a large pot, bring salted water to a boil. Add 1 cup of orzo and cook according to package instructions until al dente (usually about 8-10 minutes). Drain and set aside.
  3. Step 3: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the cauliflower florets and sauté until they are tender and slightly golden, which should take about 5-7 minutes.
  4. Step 4: In a large mixing bowl, combine the cooked orzo, sautéed cauliflower, 1 cup buffalo sauce, 1 cup shredded cheese, 1/2 cup softened cream cheese, 1 cup vegetable broth, 1 teaspoon garlic powder, 1 teaspoon onion powder, and salt and pepper to taste. Mix well until all ingredients are evenly coated.
  5. Step 5: Grease a baking dish and transfer the mixture into it. Spread it out evenly.
  6. Step 6: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the top is bubbly and golden.
