- Step 1: Preheat your oven to 375°F (190°C).
- Step 2: In a large pot, bring salted water to a boil. Add 1 cup of orzo and cook according to package instructions until al dente (usually about 8-10 minutes). Drain and set aside.
- Step 3: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the cauliflower florets and sauté until they are tender and slightly golden, which should take about 5-7 minutes.
- Step 4: In a large mixing bowl, combine the cooked orzo, sautéed cauliflower, 1 cup buffalo sauce, 1 cup shredded cheese, 1/2 cup softened cream cheese, 1 cup vegetable broth, 1 teaspoon garlic powder, 1 teaspoon onion powder, and salt and pepper to taste. Mix well until all ingredients are evenly coated.
- Step 5: Grease a baking dish and transfer the mixture into it. Spread it out evenly.
- Step 6: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the top is bubbly and golden.
- Step 7: Once baked, remove it from the oven and let it cool slightly. Garnish with fresh parsley if desired before serving.
Notes
This dish is perfect for meal prepping. You can make a large batch and enjoy it throughout the week. It also freezes well; store it in an airtight container for up to 3 months.
