  • 1 cup orzo pasta
  • 2 cups vegetable broth
  • 1 cup basil pesto store-bought or homemade
  • 1 cup grated Parmesan cheese
  • 1 cup cherry tomatoes halved
  • 1 cup spinach chopped
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Fresh basil leaves for garnish (optional)

Method
 

  1. Step 1: Preheat your oven to 375°F (190°C).
  2. Step 2: In a large saucepan, combine orzo pasta and vegetable broth. Bring to a boil over medium-high heat, then reduce heat to low and simmer for 8-10 minutes.
  3. Step 3: Stir in basil pesto, half of the grated Parmesan cheese, halved cherry tomatoes, chopped spinach, and olive oil. Season with salt and pepper to taste.
  4. Step 4: Grease your baking dish and transfer the orzo mixture, spreading it evenly.
  5. Step 5: Top with remaining grated Parmesan cheese.
  6. Step 6: Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
  7. Step 7: Let cool for a few minutes before serving, optionally garnished with fresh basil leaves.

Notes

Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven for best results.
