- Preheat your oven to 180°C (350°F).
- In a large ovenproof skillet over medium heat, add the olive oil and pancetta. Cook until the pancetta is crispy and golden brown, about 5-7 minutes.
- Add the chopped onion to the skillet and sauté until softened, about 3-4 minutes.
- Stir in the minced garlic, smoked paprika, and dried oregano. Cook for an additional 1-2 minutes until fragrant.
- Pour in the chopped tomatoes and add the drained butter beans. Stir everything together and season with salt and pepper to taste.
- Bring the mixture to a simmer, then remove from heat.
- Transfer the skillet to the preheated oven and bake for 25-30 minutes until bubbly and slightly thickened.
- Remove from the oven and let cool for a few minutes. Garnish with chopped fresh parsley before serving.
Notes
You can substitute pancetta with bacon or omit it for a vegetarian version. Serve with crusty bread for a complete meal.
