  • 400 g Canned butter beans Drained and rinsed
  • 150 g Pancetta Diced
  • 1 unit Medium onion Finely chopped
  • 2 unit Garlic cloves Minced
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Dried oregano
  • 400 g Chopped tomatoes Canned
  • 1 tablespoon Olive oil
  • to taste Salt
  • to taste Pepper
  • for garnish Fresh parsley Chopped

Method
 

Instructions
  1. Preheat your oven to 180°C (350°F).
  2. In a large ovenproof skillet over medium heat, add the olive oil and pancetta. Cook until the pancetta is crispy and golden brown, about 5-7 minutes.
  3. Add the chopped onion to the skillet and sauté until softened, about 3-4 minutes.
  4. Stir in the minced garlic, smoked paprika, and dried oregano. Cook for an additional 1-2 minutes until fragrant.
  5. Pour in the chopped tomatoes and add the drained butter beans. Stir everything together and season with salt and pepper to taste.
  6. Bring the mixture to a simmer, then remove from heat.
  7. Transfer the skillet to the preheated oven and bake for 25-30 minutes until bubbly and slightly thickened.
  8. Remove from the oven and let cool for a few minutes. Garnish with chopped fresh parsley before serving.

Notes

You can substitute pancetta with bacon or omit it for a vegetarian version. Serve with crusty bread for a complete meal.
