  • 1 pound Fresh Strawberries Select large, uniformly shaped strawberries for the Santas.
  • 8 ounces Cream Cheese Softened
  • 1/2 cup Powdered Sugar
  • 1 teaspoon Vanilla Extract
  • 1 cup Miniature Chocolate Chips
  • 12-15 Small Pretzel Sticks For Santa's mouths
  • Few drops Red Food Coloring (optional) To tint the cream cheese a festive red.

Method
 

Instructions
  1. Wash and thoroughly dry the strawberries. Select the largest strawberries for Santas (about 12-15). Cut off the green tops, leaving 1/4 inch of stem.
  2. In a medium bowl, beat the softened cream cheese until smooth. Gradually add powdered sugar and vanilla extract, beating until fluffy. Add a few drops of red food coloring, if desired.
  3. Spoon a generous amount of cream cheese mixture onto each strawberry, shaping it into a round Santa belly.
  4. Attach two miniature chocolate chips for eyes.
  5. Break a small pretzel stick in half, and use a small piece for Santa's mouth.
  6. Chill for at least 30 minutes to firm up the cream cheese (optional). Serve and enjoy!

Notes

For extra festive flair, add a tiny red candy or a sprinkle of red sugar on top of the cream cheese before adding the chocolate chip eyes. Leftover strawberries can be used in smoothies, jams or other recipes.
