Soft & Gooey Cake Mix Cinnamon Rolls

  • 1 box yellow cake mix
  • 2 ½ cups all-purpose flour
  • 2 ¼ teaspoons active dry yeast (1 packet)
  • 1 cup warm water (110°F)
  • ½ teaspoon salt
  • ½ cup unsalted butter, softened
  • ¾ cup brown sugar, packed
  • 2 teaspoons cinnamon
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract

Instructions

  1. In a large mixing bowl, combine cake mix, yeast, and warm water. Stir and let sit for 5 minutes until the yeast activates.
  2. Add in flour and salt, mixing until a soft dough forms. Knead for about 5 minutes until smooth.
  3. Cover and let the dough rise in a warm place for 1 hour or until doubled in size.
  4. Roll the dough into a rectangle (about ¼ inch thick).
  5. Spread softened butter over the surface, then sprinkle evenly with brown sugar and cinnamon.
  6. Roll the dough tightly from the long side and cut into 12 even slices.
  7. Place rolls into a greased baking dish, cover, and let rise for another 30 minutes.
  8. Preheat oven to 350°F (175°C). Bake rolls for 20-25 minutes, or until golden brown.
  9. In a small bowl, mix powdered sugar, milk, and vanilla extract to create icing.
  10. Drizzle icing over warm rolls before serving.
