- 4 cups Fresh or frozen sour cherries (Pitted)
- 1 cup Granulated sugar
- 1/4 cup Cornstarch
- 2 tablespoons Lemon juice (Freshly squeezed is best)
- 1/4 cup Water
- 1 teaspoon Ground cinnamon
- 1/4 teaspoon Ground nutmeg
- 1 pinch Pinch of salt

- Combine the cherries, sugar, cornstarch, lemon juice, water, cinnamon, nutmeg, and salt in a medium saucepan.
- Bring the mixture to a boil over medium heat, stirring constantly.
- Reduce the heat to low and simmer for 5-7 minutes, or until the filling has thickened and the cherries have softened.
- Remove from heat and let cool completely before using.
- Stir occasionally while cooling to prevent a skin from forming.
- Once cooled, the filling can be used to fill a pie crust, or used as a topping for crisps or cobblers.
Notes
For a thicker filling, increase the cornstarch to 1/3 cup. You can also add other spices, such as allspice or cardamom, to taste.
