Shrimp Sausage Rice Skillet

The thing that most often makes skillet meals shine is the winning combination of so many blended flavors and textures. Among those, one of my favorites is the creole inspired flavors that fill out my shrimp sausage rice skillet.

The savory, peppery stew of herbs and spices with aromatic celery and onions beautifully complement the buttery shrimp and sweet juicy andouille sausage mixed in a saucy bed of fluffy white rice. Deep flavor, full-body, and lots of Cajun heat make this shrimp sausage rice skillet sing.

This recipe is a great chance for you to get acquainted with your spice rack. If you don’t regularly dress up your meals, besides salt and pepper, with basil, oregano, garlic powder, etc. now is the time to take them out for a little test drive. This recipe, like many creole recipes, uses a general all-purpose Cajun seasoning called Slap Ya Mama. This spice blend is authentically creole seasoning and it’s useful in a wide variety of recipes.

Before we get started on this incredible shrimp sausage rice skillet recipe, here are some tips and essential information you need to know before you start cooking. Before you begin, make sure you have the correct skillet for cooking this dish and that you do all of the necessary prep work.

Make Sure You’ve Got It Covered

The first thing to do is to make sure you use the right pan. Skillets and frying pans are similar, but frying pans don’t have covers, which are essential to this and most other skillet recipes.

Don’t start on this recipe if you aren’t sure you have a cover, you don’t want to have to manufacture one out of found kitchen items on the fly. It isn’t a pretty picture. Make sure you use a deep enough skillet to hold all of the ingredients. That’s the key to the success of these amazing meal solutions.

Likewise, skillet meals are similar to stir fry in concept, but not in practice or technique. When you cook in a wok you have to keep the food moving a lot. A skillet is a flat bottom pan whereas a wok will drain liquids down toward the center. Part of the magic of a good skillet meal is that the flavors soak and stew together, so you don’t want the liquid running off.

Using a Cast Iron Skillet

It is not ideal to use a cast iron skillet for this recipe. Cast iron skillets tend to absorb the flavors that are cooked in them so things like garlic and seafood should be avoided.

When getting ready to clean a cast iron skillet, refrain from scrubbing with soap or steel wool, as it will harm the pan. Instead, hand scrub the pan with coarse salt and water. For tough clinging food simmer the pan for a few minutes and allow the skillet to cool before scraping.

Deveining Shrimp

The “vein” in shrimp is actually the shrimps digestive tract, and the dark stuff inside of the “vein” is grit. It is not harmful to cook shrimp without deveining first, but it may affect the texture of the shrimp, making it a bit more gritty and grainy.

If you get unpeeled shrimp, you will need to devein it. The proper way to devein shrimp is to first peel it, then simply cut a slit in the backside and push the vein out with the tip of a paring knife. Peeled shrimp is often deveined already.

Save it For Later

Skillet meals like this do best as a leftover because the storage gives the flavors longer to marinate. After the rice and other ingredients have soaked for a while in the optimal herbs and spices, each bite is going to have that perfect flavor, even better than when you had it fresh off the skillet.

You can enjoy this skillet as a meal for two or a feast for the family, and it stores well so you can enjoy it throughout the week. To properly store your rice skillet meal leftovers, fill a plastic food storage container and seal with a lid. Store in the refrigerator for up to 3 days.

  • Andouille sausage
  • Jalapeno
  • Bell pepper
  • Celery
  • Onion

How To Make Shrimp Sausage Rice Skillet

  • In a large skillet over medium high heat, heat oil and add sausage. Cook, stirring occasionally, until slightly browned.
  • Add jalapenos, onions, celery and garlic. cook until onions are translucent and tender.
  • Add chicken broth and rice, bring to a boil, reduce heat to medium.
  • Cover and let cook until rice begins to soften.
  • Mix in shrimp and cook until shrimp is pink in color and no longer translucent.
  • Lastly, add tomato sauce and seasoning. Reduce heat, stir, cover and cook for 15 minutes.
