A skillet is a flat bottom pan whereas a wok will drain liquids down toward the center. Using a Cast Iron Skillet
It is not ideal to use a cast iron skillet for this recipe. Cast iron skillets tend to absorb the flavors that are cooked in them so things like garlic and seafood should be avoided.
When getting ready to clean a cast iron skillet, refrain from scrubbing with soap or steel wool, as it will harm the pan. Instead, hand scrub the pan with coarse salt and water. For tough clinging food simmer the pan for a few minutes and allow the skillet to cool before scraping.
The “vein” in shrimp is actually the shrimps digestive tract, and the dark stuff inside of the “vein” is grit. It is not harmful to cook shrimp without deveining first, but it may affect the texture of the shrimp, making it a bit more gritty and grainy.
If you get unpeeled shrimp, you will need to devein it. The proper way to devein shrimp is to first peel it, then simply cut a slit in the backside and push the vein out with the tip of a paring knife. Peeled shrimp is often deveined already.
Save it For Later
Skillet meals like this do best as a leftover because the storage gives the flavors longer to marinate. After the rice and other ingredients have soaked for a while in the optimal herbs and spices, each bite is going to have that perfect flavor, even better than when you had it fresh off the skillet.

- In a large skillet over medium high heat, heat oil and add sausage. Cook, stirring occasionally, until slightly browned.
- Add jalapenos, onions, celery and garlic. cook until onions are translucent and tender.
- Add chicken broth and rice, bring to a boil, reduce heat to medium.
- Cover and let cook until rice begins to soften.
- Mix in shrimp and cook until shrimp is pink in color and no longer translucent.
- Lastly, add tomato sauce and seasoning. Reduce heat, stir, cover and cook for 15 minutes.
