Rib Eye Breakfast Pastry Ring

Every Christmas holiday we have a huge rib eye roast dinner either for Christmas Eve or for Christmas dinner. And we always have leftovers (because I buy such a large roast every time, on purpose, haha!). This rib eye breakfast pastry ring is just one of the recipes made using the leftover rib eye roast from Christmas Eve’s dinner. And, even though it’s the start of a new year, and Christmas is over, this delicious breakfast pastry ring can be made anytime and one everyone enjoys.

Easy Breakfast Recipe

Not only did I make this delicious breakfast recipe using leftover rib eye, but I also made Rib Eye Nachos which will be posted at a later time. This easy breakfast recipe makes a great breakfast or brunch idea that tastes scrumptious and is always gobbled up. Most likely there will be no leftovers.

With such a delicious cut of beef, so many recipes can be made using any leftovers you might have. Last year, we made Rib Eye Street Tacos and Cheesy Rib Eye Enchiladas from this delicious Bacon Wrapped Rib Eye Roast we had for Christmas dinner.

Rib Eye Breakfast Pastry Ring is made with leftover rib eye, scrambled eggs, onions, cheese and more, wrapped in a crescent pastry ring.

Ingredients Needed To Make A Breakfast Pastry Ring

  • Leftover Rib Eye Roast, Rib Eye Steak, Prime Rib or steak
  • Pillsbury crescent dinner rolls
  • Eggs, butter, garlic salt, pepper
  • Monterey Jack cheese
  • Diced jalapeños
  • Sliced green onions
  • Salsa or sauce of your choice

How To Make A Rib Eye Breakfast Pastry Ring

  1. In a large frying pan, melt butter over medium heat. Add eggs, garlic salt and pepper.
  2. Scramble eggs until almost done (will be a little wet looking still).
  3. Unroll crescent rolls and separate into precut triangles.
  4. Place triangles on an ungreased baking sheet so that the wider end of the crescent is in the center forming the circle with about a 5 inch opening in the center and the smaller tip of the crescent is on the outside.
  5. Add scrambled eggs over the wide part of the crescents.
  6. Next, top with rib eye, then diced jalapenos, sliced green onions and finally shredded cheese.
  7. Fold the small tip of the crescent over and tuck under the wider part to secure forming the ring.
  8. Bake for approximately 16-20 minutes or until crescents are golden brown.
  9. Carefully remove from oven, let cool for a few minutes before slicing.
  10. Optional: serve with your favorite salsa, sour cream, sliced avocado.

Ingredients  

  • 2-3 cups leftover rib eye roast, cut into 1/2″ pieces
  • 12 eggs, whisked
  • 1 Tbsp butter
  • 1 tsp garlic salt
  • 1/2 tsp pepper
  • 3 cups Monterey Jack cheese, shredded
  • 1/4 cup diced jalapenos
  • 2 containers Pillsbury™ refrigerated crescent dinner rolls
  • Optional: salsa for dipping/topping
  • 1/4 cup green onions, sliced

Instructions 

  • Preheat oven to 375°

Making The Breakfast Pastry Ring

  • Unroll crescent rolls and separate into precut triangles.

    *When forming the circle, the wider ends of the crescents will overlap each other.
  • Add scrambled eggs over the wide part of the crescents.

  • Next, top with rib eye, then diced jalapenos, green onions and finally shredded cheese.

  • Fold the small tip of the crescent over and tuck under the wider part to secure forming the ring.

  • Bake for approximately 16-20 minutes or until crescents are golden brown. 

  • Carefully remove from oven, let cool for a few minutes before slicing.
