When you think about nachos, they really are a full meal in and of themselves, especially these loaded nachos. With beef, cheese, classic Mexican veggies, and even fruit – avocado is a fruit – this recipe is a full-on meal.

These mile high nachos already have everything in them but the kitchen sink, but that’s just for this recipe. The great thing about nachos is that you can do almost anything with them.

Storing Mile High Nachos
These mile high nachos are made with cheese, guacamole, chopped green onions and yellow onions, so they need to be eaten quickly. These nachos will stay good for about two days when stored in an air-tight container in the refrigerator.
That being said, nachos are best enjoyed the day they’re made. All the ingredients are nice and melded together and the nacho chips themselves are still crunchy. You CAN reheat nachos, but the chip texture will be soft, not crispy.
It’s important to note that you should toss out the nachos after two days. Being made with freshly chopped veggies, beef, and dairy, and the fact that nachos are usually left out for snacking at room temperature for quite a while opens up nachos to bacterial growth.

- Ground beef
- Taco seasoning
- Tortilla chips
- Refried beans
- Mozzarella cheese
- Sharp cheddar cheese
- Nacho sauce
- Pickled jalapenos
- Sour cream
- Green onions

How to Make Mile High Nachos
- Preheat oven to 400°
- Cook ground beef and onions until meat is no longer pink. Drain, return to pan and add taco seasoning and water. Bring to a boil, reduce heat and simmer for 5 minutes.
- Heat beans in a small saucepan until hot.
- Spray a large stainless steel bowl generously with non-stick spray.
- Add 1/4 of the tortilla chips, followed by 1/4 ground beef, beans, and cheese. Repeat 3 more times ending with cheese.
- Place bowl in preheated oven and bake for 15 to 20 minutes or until cheese is hot and bubbly.
- Carefully remove bowl from oven and scrape the cheese from the sides of the bowl, if needed.
- Place a large platter or sheet pan over bowl and carefully invert. Remove bowl.
- Heat nacho sauce and pour over the top of the nachos.
- Top with guacamole, sour cream, jalapenos, green onions, and cilantro.
