Although these jalapeno cheese muffins have a touch of heat to them from the jalapenos, it is not so hot that you can not enjoy them. Firstly, you will want to remove the seeds and the ribs from the jalapenos. These muffins have a bit of heat to them and can still be enjoyed by all. However, if you want your muffins to be hotter you can choose a spicier pepper or you can add a touch of hot sauce to the batter.

There are times when you just don’t have time to bake fresh muffins. With this muffin recipe, that’s ok. For this purpose, these muffins can be made in advance and stored at room temperature or they can be stored in the freezer for several months.

With these muffins, I’m using shredded cheddar cheese. In fact, you can buy store-bought shredded cheese or shred blocks of cheese yourself. However, other types of cheese will work well with this recipe like a Mexican or Taco blend or mild or sharp cheddar cheese and even pepper jack cheese is great to use as well.

These jalapeno cheese muffins can be stored at room temperature. Make sure the muffins are stored in a way that they are protected from the air. You can store the muffins in an airtight container or you can store them in a freezer bag.
Can you freeze jalapeno cheese muffins
These muffins freeze beautifully. If you have extra muffins that will go bad before you can eat them all or if you want to make a double batch to have on hand, you can wrap these muffins individually or store them in a freezer bag. Take them out of the freezer and let them thaw when you are ready to eat them. The muffins will stay good in the freezer for up to 3 months.
Do These Muffins Need Liners
Using cupcake liners make it easier to get the muffins out of the pan and is great for a grab-and-go treat. Liners are not necessary, just make sure to spray or grease the muffin pan so the muffins don’t stick. Grease and flour them well. If it is not greased well, the muffin will stick and fall apart as you try to take it out of the muffin tin.

- All purpose flour
- Sugar
- Baking powder
- Egg
- Milk
- Vegetable oil
- Cheddar cheese
- Jalapeño

- Preheat oven to 400° and line a 12 cup muffin tin with cupcake liners or spray with a non stick cooking spray. Set aside.
- In a medium bowl, whisk together flour, baking powder, and sugar.
- In a large bowl, whisk egg, milk and oil together.
- Now, add the dry ingredients to the wet ingredients and stir just until combined (batter will be lumpy).
- Next, fold cheese and diced jalapenos into batter.
- Fill muffin pan or cupcake liners ⅔ full.
- Bake for 20-25 minutes or until toothpick inserted comes out clean.
- Lastly, remove from muffins from pan and serve warm.
