This delicious soup has a few things going for it. To begin with, using ground beef and frozen mixed vegetables cuts down the prep time for this recipe drastically while still delivering the flavors we expect in a soup like this. In addition, it has this perfect dichotomy of light and hearty, which makes it perfect for both spring and summer meals as well as fall and winter. Finally, it’s actually quite healthy. Hamburger Soup with Vegetables

Some people call this ground beef vegetable soup hamburger soup, but I tend to stick with this name. Hamburger soup is actually another kind of soup altogether. However, both fit. I love how tasty the hamburger is in this soup and how convenient it makes the entire cooking process. I think you will, too, once you give this recipe a try.

Possible Variations

The great thing about this soup is how easy it is to tailor it to your specific tastes. You can change up all kinds of things in this recipe to make it your own.

Different Meat

If you’re trying to avoid saturated fat, you can use ground turkey or chicken in this recipe. For a different flavor twist, try browning up ground Italian or breakfast sausage to go in this soup. They’re all tasty.

Different Veggies

This classic version uses frozen mixed vegetables, but you can use any vegetables that you like. You’ll find a wide variety of options in the frozen section of your local grocery store. The sky is really the limit when it comes to veggies in this soup. One vegetable that I love in this soup is cabbage. It works very well in this dish. You can even add peas, carrots, or green beans.

Add Rice or Pasta

You can add rice or pasta to this soup, as well. They make a nice texture and flavor addition to the ground beef and vegetables.
