Homemade Funfetti birthday cake is definitely the way to go for a higher quality and tastier version of this popular classic.
The Basic Steps to a Homemade Funfetti Cake
Baking a cake from scratch is not really all that different from baking a cake using a box mix. The only real difference is you make your own mix before you ultimately combine it with the same wet ingredients you’d wind up with either way. That’s good news if you want to bake homemade funfetti cake all on your own without the aid of a certain doughboy. Assuming you do, here’s how to do it.
First, you have to grease your pan. You need to do this no matter what because you do not want that cake to stick. It’s a nightmare trying to get it out and keep the cake intact while jiggling a knife all around the pan in a “Hail Mary” attempt to break the stubborn cake free of the metal it’s clinging to. It’s also a good idea to line the pan with parchment paper.
After that, simply mix up the dry ingredients, then the wet ingredients, and add the dry to the wet slowly as you blend it all together. That’s literally it. Baking a cake from scratch is only different from using a box in the sense that you need to have all the ingredients on hand. If you enjoy making a lot of cakes, you should keep these ingredients handy so you can always have them available for a new batch of homemade goodies.
All you need to do next is pour the batter, bake and then let cool once the cake is done cooking.
Putting the Fun in Funfetti
What exactly is funfetti cake mix? Funfetti looks exciting, but what is it? Why is it so special? The uniqueness of the funfetti cake mix is its colorful melted sprinkles that look like confetti baked into the cake. This is a pretty effect, but there isn’t much going on in the flavor department. That’s why I use rainbow colored baking chips instead. They are like chocolate chips only vanilla flavored, and of course they are brightly colored. The way they bake into the cake is far better than sprinkles in my opinion.
Homemade Frosting, Too?!
Lots of recipes for cake or cupcakes will call for one element to be made from scratch while the other is store bought. I’ve seen recipes call for boxed cake mix and then include detailed instructions for making your own frosting and vice versa. This is no way to be! Making your own frosting is just as easy and rewarding as making your own cake mix. If you go through the trouble of buying the ingredients for one, you likely have most of what you need for the other.
Like the canned stuff, this frosting recipe doesn’t include sprinkles inside, but you can top the frosting with sprinkles as desired. Making frosting is as simple as just combining the ingredients. Then you simply spread it onto the cake once it has cooled completely.
Why Cherry and Vanilla?
It won’t come as a total shock, but this cake has a lot of vanilla flavor. It’s sugary and that hyper sweet one-note quality may not be for everybody. As an added measure to introduce some variance and a little more fun to the funfetti experience, I’ve added cherry flavor as well. It’s the perfect little extra flavor boost that makes this funfetti cake unique and interesting. I chose this because I love the cherry and vanilla combo and it’s not as common as other flavors like strawberry, lemon or raspberry. That makes it unique and special. But you can add any flavor of extract you prefer to add another level of flavor.
How to Free a Stuck Cake
As I mentioned earlier, it’s possible your cake might get stuck in the pan and not want to come out. This is one of the worst problems of baking cakes because it threatens the integrity of the cake and can result in a mangled mess that is difficult if not impossible to cover up with frosting. The best way to fix this is to avoid it ahead of time by really greasing the pan well and using parchment paper as an added precaution. Also, dust the cake pans with a little flour. You can also use a springform pan, which allows you to make the sides of the pan wider so you can gently lift the cake out by pushing up from the bottom.
If you are stuck however, there are some tactics you can use. After you have let the cake cool down for about ten minutes, you can turn it upside down and cover it with a warm, wet dish towel. If it doesn’t come out on its own within a few minutes, tap the bottom with a mallet to try and loosen it up. The cake may slowly release itself if you just leave it alone upside down like that. Otherwise you may need to go in with a fillet knife. Some say table knife, but I like a fillet knife because of the flexible blade. Turn the pan over again and repeat the previous steps. Do not attempt to pry the cake free except as a final desperate attempt.

How To Make A Funfetti Cake
- Preheat oven to 350° and grease two 8 inch round cake pans and dust with flour. Set aside.
For the Funfetti Cake
- In a medium bowl, whisk flour, baking powder and baking soda together. Set aside.
- In a large bowl, beat butter and sugar together until light and fluffy.
- Beat eggs into butter mixture, one at a time, until combined, then add vanilla and cherry extract.
- Add dry ingredients into the wet ingredients and mix until combined.
- Next, mix milk until smooth and then stir in rainbow baking chips.
- Pour cake batter into prepared pans.
- Bake for 30-40 minutes or until toothpick inserted in the center comes out clean.
- Remove from oven, place on a wire rack and let cool completely.
For The Frosting
- In a large bowl, beat cream cheese and butter together until smooth and creamy.
- Gradually add powdered sugar, two cups at a time, and beat until smooth.
- Add vanilla and beat until combined.
- Frost cakes once cakes have completely cooled.
- Add sprinkles to outside of cake, as desired.
