Tips

This is a super easy recipe to make. The cookie cups are nothing more than tiny chocolate cookies that you make in a mini muffin tin, and the filling is just instant chocolate pudding. After that, it’s simply a matter of filling the cups with the pudding and serving. It’s as easy as, well, pie.

Although the recipe is super easy, there are a few tips that will make things go even smoother for you and ensure you get the absolute best mini chocolate cream pie cookie bites you possibly can. Let’s take a look at them.

Make the Chocolate Filling First

To make the best use of your time, make the chocolate pie filling first so that it has plenty of time to set up as you make the chocolate cookie bites. Otherwise, you’ll be waiting around longer than necessary to put these tasty treats together.

Don’t Overfill the Muffin Tins

When making the chocolate cookie bites, don’t overfill your mini muffin tin. Only fill the tins halfway. You want the cookie bites to be deep enough to hold a nice dollop of pie filling, and that’s it. If the cups are too thick, it will be difficult to make a hollow center later, and you’ll end up with more of a pudding topped cookie than a pudding filled cup.

Let the Bites Cool to Just Slightly Warm

You want to let your cookie bites cool for about 15 to 20 minutes after taking them out of the oven. They should be just warm when it’s time to press in the center for the filling. If they’re too hot, they won’t hold their shape, and if they’re too cool, you won’t be able to effectively make the hollow center. Don’t worry, it might sound daunting, but you’ll get the hang of it quickly.

Use a Wooden Spoon Handle for the Cookie Cups

The easiest way to make the hollow center of these mini chocolate cream pie cookie cups is with a wooden spoon handle. Press the handle into the center of the cookie and then move the spoon around in a circular motion, keeping the center of the spoon in place. This will create a hollow in the cookie cup that’s just the right size for the filling.

A Piping Bag is Your Friend

Speaking of fill, a piping bag is your friend for this. It’s far, far easier to use a piping bag with a plain round tip to fill your cookie cups than it is to try to spoon the filling in. A piping bag allows you to quickly and easily add the perfect amount of filling to each cookie cup. Using a spoon usually results in a big mess. Trust me…
