What I love about having a recipe I can whip up in no time at all is that it’s always a hit with the family. Feeding other mouths than just my own can be a big responsibility and one that I don’t take lightly. After all, no one wants to be labeled a bad cook, right? For this reason (and because I just genuinely love to cook) I’m always looking for new ways to spruce up our dinner plans. What I’ve found is that sometimes simple recipes are the ones that my family tends to love.

And for me, that’s absolutely fine. I have other things I can be doing with my time than trying out recipes that aren’t a fit for my family so when I get a winner like this quick and easy Cheesy Chicken Quesadillas recipe, it’s one that I make certain is in our meal planning rotation for sure.

What goes good with chicken quesadillas?

If you’re looking for some side dish options to pair up with your chicken quesadillas, you’ve got options, friends! You can pair them with a nice side salad, some refried beans or even a bowl of fried rice. Since the main two ingredients of the quesadilla happen to be chicken and cheese, you can really have fun with adding a side dish of vegetables or something along those lines.

How do you eat quesadillas?

Since they’re really not that messy of a food, pick it up and eat it with your hands! Some people cut the tortillas in half while others cut then in quarters to share. If you’re planning on dipping them in anything like salsa or sour cream, quarters work great for that!

What is the difference between fajitas and quesadillas?

They’re actually very different. Fajitas are served with meat and veggies on a skillet or hot plate where the ingredients are then added into a tortilla to eat. Quesadillas, on the other hand, are made where all the ingredients are already added into the tortillas to cook and enjoy easily.

Why is a quesadilla called a quesadilla?

Isn’t it fun to learn new things? Quesadillas actually aren’t a new concept at all as it seems they originated all the way back in the 16th century. The term quesadilla literally means “little cheesy thing”.

Can you use corn tortillas instead of flour tortillas for quesadillas?

You can but it does create a bit of a different texture. The reason that we love to use flour tortillas is that they’re just so soft and easy to use. There’s something about the texture of them that goes perfectly with the ingredients as well. Corn tortillas would work but they won’t have that same “softness” to them that the flour tortillas bring.

Ingredients Needed To Make Cheesy Chicken Quesadillas

  • Chicken breasts, boneless, skinless
  • Onions, bell pepper
  • Vegetable oil, butter
  • Taco seasoning
  • Garlic salt
  • Cumin, pepper
  • Red pepper flakes
  • Diced green chilies
  • Monterey Jack cheese
  • Sharp Cheddar cheese
  • Flour tortillas

How To Make Homemade Cheesy Chicken Quesadillas

  1. Heat oil in a frying pan or large skillet over medium heat.
  2. Add chicken, onions and bell pepper into pan, sprinkle with taco seasoning, garlic salt, cumin, pepper and red pepper flakes, stir and cook until chicken is cooked and onions are translucent.
  3. Pour diced green chilies into pan, stir until combined and continuing cooking for a few more minutes.
  4. Add chicken mixture on one half of tortilla, add both types of cheese on top of chicken, fold tortilla over and add another tortilla to pan and repeat process.
  5. Cook over medium heat until tortillas starts to brown, a few minutes per side, then flip over and cook the other side until the cheese is melted and the quesadillas are golden brown.
  6. Remove from pan, place on a plate.
  7. Add the other tablespoon of butter to pan and repeat with the remaining tortillas and chicken mixture until all 8 quesadillas are made.
  8. Cut into wedges right before serving.
  9. Top with your favorite toppings like sour cream, green onions, cilantro and/or avocado, then enjoy!

As you can tell, this is one of my favorite recipes for a reason. I just love being able to put it together easily and then pile it high with sour cream and cilantro. Call me crazy, but anytime that I eat any type of Mexican food, I get really excited thinking about all the different toppings!

I don’t think that you can ever really overload on toppings for this recipe, so have fun and load it up!

  • 3 boneless, skinless chicken breasts, cut into small pieces

  • In another frying pan, melt 1 tablespoon of butter and place a tortilla into pan,

  • Add chicken mixture on one half of tortilla, add both types of cheese on top of chicken, fold tortilla over and add another tortilla to pan and repeat process.

  • Cook over medium heat until tortillas starts to brown, flip over and cook the other side. 

  • Remove from pan, place on a plate.

  • Add the other tablespoon of butter to pan and repeat with the remaining tortillas and chicken mixture until all 8 quesadillas are made.

  • Cut into wedges right before serving.

  • Top with your favorite toppings like sour cream, green onions, cilantro and/or avocado, then enjoy!
