Soft & Gooey Cake Mix Cinnamon Rolls

- 1 box yellow cake mix
- 2 ½ cups all-purpose flour
- 2 ¼ teaspoons active dry yeast (1 packet)
- 1 cup warm water (110°F)
- ½ teaspoon salt
- ½ cup unsalted butter, softened
- ¾ cup brown sugar, packed
- 2 teaspoons cinnamon
- 1 cup powdered sugar
- 2 tablespoons milk
- 1 teaspoon vanilla extract
Instructions
- In a large mixing bowl, combine cake mix, yeast, and warm water. Stir and let sit for 5 minutes until the yeast activates.
- Add in flour and salt, mixing until a soft dough forms. Knead for about 5 minutes until smooth.
- Cover and let the dough rise in a warm place for 1 hour or until doubled in size.
- Roll the dough into a rectangle (about ¼ inch thick).
- Spread softened butter over the surface, then sprinkle evenly with brown sugar and cinnamon.
- Roll the dough tightly from the long side and cut into 12 even slices.
- Place rolls into a greased baking dish, cover, and let rise for another 30 minutes.
- Preheat oven to 350°F (175°C). Bake rolls for 20-25 minutes, or until golden brown.
- In a small bowl, mix powdered sugar, milk, and vanilla extract to create icing.
- Drizzle icing over warm rolls before serving.
