Creamy Banana Pudding Blondies with a Caramel Twist

  • 2 ripe bananas, mashed
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 cup instant banana pudding mix
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chopped walnuts (optional)
  • 1/2 cup caramel sauce (for drizzle)

Instructions

  • Preheat oven to 350°F (175°C) and grease a 9×9 inch baking pan.
  • In a large bowl, whisk together melted butter, sugar, eggs, and vanilla extract until smooth.
  • Stir in the mashed bananas until fully incorporated.
  • In a separate bowl, combine the flour, instant banana pudding mix, baking soda, and salt.
  • Gradually fold the dry ingredients into the wet mixture until just combined.
  • If using, gently fold in the chopped walnuts.
  • Pour the batter into the prepared pan, smoothing the top evenly.
  • Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  • Allow to cool in the pan for 10 minutes, then drizzle with caramel sauce.
  • Cut into squares and serve warm or at room temperature.
